Mexican Kiwi Glaze Chicken Skewers
Yum! I'm making this.
Mexican kiwi glazed chicken skewers with the tang of lime and a bit of spice. These skewers are great served on a bed of long grain rice.
1 Jar of Wozz! Kiwi Lime Salsa Verde
1½ pounds boneless & skinless (cut into 1 ½ inch pieces)
2 tbsp Cumin ground
Fresh Ground Pepper
Picked cilantro leaves
2 Garlic Cloves
❶Cut your chicken into 1 ½ inch pieces. Mix together honey, 2 limes juiced, 2 teaspoon of lime zest, garlic, salt & pepper. Place chicken in marinade and refrigerate for at least 4 hours.
❷Soak bamboo skewers in water for at least 20 minutes (keeps them from burning on the grill). Preheat Grill. Thread chicken onto skewers.
❸Drizzle with a bit of olive oil. Grill for approx 3-4 minutes on each side until each side is charred a bit/or has nice grill marks. Remove chicken from grill.
❹Heat in saucepan ⅔ jar of Wozz! Kiwi Salsa Verde. Bring to a gentle simmer. Add chicken skewers and cover. Let cook for about 5 minutes.
❺Remove glazed chicken from sauce. Serve over rice recipe here. Pour the warm Salsa Verde sauce over the skewers. Top fresh picked cilantro leaves and a pinch of salt and pepper. Enjoy!!
