This Thai Peach Basil Salsa is a summer limited edition!  We make this wonderful fruit salsa once a year using only fresh peaches, fresh basil, fresh lime and Thai chili spice.  It's a labor of love, each peach hand cut by us.  This is a fantastic salsa atop grilled chicken, swordfish, and mahi mahi and is also delicous with rich meats like pan fried duck.  Spoon over a platter of assorted cold cuts sprinkled with your favorite fresh herbs or add to tacos. Add a little oil and fresh lime and dress a salad. A unique alternative salsa for tortilla chips!

Chicken Peach Salsa Tacos

Dust chicken fillets or duck in Chinese 5 spice blend. Pan fry to crisp the skin and seal in the flavor before finishing in the oven. Serve with a good spoonful of salsa and an Asian style side salad and rice.

Mexican with a twist, swap out the usual tomato salsa for fish tacos, nachos, bean salads and dipping corn chips!

Spoon over a rustic platter of cold cuts, try prosciutto, olive oil, cracked pepper and chervil.

Use with rich meats roast or grilled meats like venison, lamb and duck instead of heavy sauces or gravy.
