So it's all the rage right now, Coconut and Chia seeds.  You all remember those infomercials right?  Can you believe that was the 80's.  Yes we are getting old.  Anyway, forget the chia pet and try this delicious coconut chia pudding.  It's packed with protein, calcium, fiber and omega fatty acids and it leaves you full for hours.

Sugared & Spiced Nuts

Okay, so I made these nuts to put on salad tomorrow but I don't know if they or I will make it till then.  They are soooo good and they do go nicely with my evening IPA.  Not only that, but Wozz is on his way home from a long weekend away and I am sure as soon as he smells the aroma in here, they (the nuts) won't stand a chance.

Nuoc Cham | Vietnamese Dipping Sauce

 Vietnamese Dipping Sauce (Nuoc Cham)

One important element of Vietnamese cuisine is nuoc cham or a Vietnamese dipping sauce. Nuoc cham is a fish sauce based dipping sauce that deftly balances sweet, salty and sour aspects and it is really easy to make at home. The basic recipe includes fish sauce, water, sugar and lime juice and chilies and garlic are often added as well. The few minutes that it take to make your own nuoc cham are definitely worth is and when you make your own, you can make it with your prefect balance of sweet, salty, sour and spicy.

Nuoc cham is served with many different dishes including to dress salads and Vietnamese coleslaw, fried dumplings and  summer rolls.
