Double Smashburger with Onion Jam
Oh man, these are so good! If you haven't had a "smashburger" yet, you must get in on the action. They are simple to make, you take ground beef with about 15-20% fat, season with salt and pepper and basically just smash them down with a spatula on a hot griddle. You can easily do these outside during the summer on the grill, just place a griddle pan on the grill and get it nice and hot. Of course, you add your cheese so it's gooey and melty and then we add crispy bacon, our Triple Ale Onion Spread and a homemade "Dijonnaise" along with lettuce and tomato. All of this is piled on a grilled brioche bun. YUMM!
Double Smashburger with Onion Jam (serves 2)
1 lb Ground Beef (80/20)
American Cheese (but you can use Swiss or Cheddar if preferred - whatever cheese you prefer)
4 Slices Thick Cut Bacon (we used North Country Smokehouse)
Wozz! Triple Ale Onion Spread
Lettuce
Sliced Tomato
Brioche Buns (grilled)
Oil
"Dijonnaise" Ingredients: (this makes extra in case you are serving more than 2 burgers)
1/2 Cup Mayonnaise
1/4 Cup Dijon Mustard
2 Tablespoons Wozz! Southern Style Rustic Mustard or a Wholegrain Mustard
*you can add more Dijon mustard to this, if you want a stronger mustard flavor
Method:
Make Your Dijonnaise: In a small bowl mix together mayo, dijon mustard and Wozz! Southern Style Rustic Mustard. Set aside.
Cook your bacon (either in a pan or in the oven until crispy). Set aside.
Form your burgers loosely into a ball. Season with salt and pepper.
Grill your buns or put under the broiler until toasted (whichever you prefer depending if your cooking indoors or outdoors)
Get your griddle pan nice and hot! Add a small amount of oil to griddle pan, place your burger balls on the grill pan and smash 'em down with a spatula until about 1/4 inch thick. Let them cook for about 90 seconds or so then flip. Add your cheese and cook for another 90 seconds or so.
Assemble Your Smashburgers
To the bottom bun, add some Dijonnaise, then add lettuce, sliced tomato, your double smashburgers, bacon, Wozz! Triple Ale Onion Jam Spread, more Dijonnaise and then top with bun.
