Strawberry Rhubarb Mojitos
It's April 9th, so we are getting there...the snow is finally melting, the robins are back and the days are getting longer. Summer is coming...hooorayyy! These strawberry rhubarb mojitos may be a bit premature for April but they have me dreaming of summer days poolside. They are a snap to make because our strawberry rhubarb vinegar takes the work out of making a strawberry rhubarb simple syrup from scratch. All you need is our strawberry rhubarb vinegar shrub, fresh mint, a lime, rum, seltzer water and a couple strawberries.
It's cocktail time!
Strawberry Rhubarb Mojitos (makes 2 cocktails)
3 ounces Light Rum
Fresh Mint Sprigs (approximately 12 leaves) (2 springs for garnish)
1 Lime (1/2 squeezed and 1/2 for garnish)
4 Strawberries (2 for cocktail and 2 for garnish)
2 ounces Wozz! Strawberry Rhubarb Vinegar Shrub
Polar Strawberry Seltzer Water or plain seltzer water, club soda or carbonated water
Method:
In a cocktail mixer, muddle fresh mint leaves and 2 strawberries using the back of a spoon. Add 2 ounces of Wozz! Strawberry Rhubarb Vinegar, juice of 1/2 lime and 3 ounces of light rum. Gently mix with spoon. Add crushed ice, place top on cocktail mixer and shake. Fill a high ball glass with crushed ice, strain cocktail shaker juice into glass. Top each glass with seltzer water. Garnish with mint sprig, fresh lime wedge and sliced strawberries.
