Corn Relish Dip

This corn relish dip is creamy, sweet and tangy and has a nice kick of spice from our Green Tomato Jalapeno Pepper Jelly.  Corn relish dip is a quintessential summer appetizer.  It's just delicious and a must-have for summer picnics, camping, 4th of July parties and barbecues.  We serve it with buttery crackers.

Ingredients:

1 Large Ear of Corn husked
1/2 Red Pepper Diced
1 Jar Wozz! Green Tomato Jalapeno Pepper Jelly (3/4 Cup for corn relish + 3 Tbs you will mix in at final step)
8 Ounces Cream Cheese (softened)
1/4 Cup Sour Cream
Salt and Pepper 
Garnish with fresh chopped cilantro (optional)

Recipe

Make Your Corn Relish 

In a cast iron skillet on medium high heat, add 1 tablespoon of water.  Once nice and hot add your corn kernels and diced red pepper.  Cook just a minute or so until corn cooked through.  Stir in 3/4 Cup Wozz! Green Tomato Jalapeno Pepper Jelly.  Once dissolved through, immediately remove from heat and transfer to bowl to cool.  Season with salt and pepper to taste.

Transfer to fridge, allow to cool for at least an hour.  

Make Your Dip

In a medium mixing bowl, mix together cream cheese and sour cream.  Add 1 1/3 Cups of your corn relish.  Mix together.  Add approximately 3 additional tablespoons of Wozz! Green Tomato Jalapeno Pepper Jelly (or to your taste preference).  Season to taste with salt and pepper.   

Transfer to fridge, allow to cool.  Serve chilled with crackers.  I prefer buttery toasted crackers with this dip such as Ritz or Townhouse.

*Recipe Notes

You can substitute frozen corn or canned corn just omit the tablespoon of water in cast iron skillet when cooking corn. 

This dip can be modified for your taste preference.  There is some wiggle room to adjust the ratios of cream cheese to sour cream to corn relish to pepper jelly as desired.
