I made a recipe similar to this one using roasted grapes and shiraz wine a couple years ago and I never forgot the flavor, it went perfectly with the sausages. When we starting making our Sour Cherry Spiced Wine Fruit Compote, I knew this would be a fantastic swap out for the grapes and would make a delicious pan sauce.
Sausages with Cherry Balsamic Sauce
Ingredients:
Sweet Pork Sausage (2 pounds = 4 large sausages)
1/2 Jar Wozz! Sour Cherry Spiced Wine Fruit Compote
3 Tbs Balsamic Vinegar
1 Tbs Butter
Avocado Oil
Salt and Cracked Pepper
Recipe:
On the stove top in a large oven proof skillet on medium high heat add a drizzle of avocado oil to pan. Sear sausages for approximately 3-4 minutes on each side until nice and browned turning only once.
Transfer to oven and roast at 425 degrees F for approximately 10-12 minutes on each side until cooked through (so a total cooking time of 20-25 minutes) - cooking times will vary depending on your oven and the size of your sausages (mine were large)
Remove from oven and transfer sausage from skillet to serving platter.
Place skillet back on stove top and over medium high heat add balsamic vinegar to pan and deglaze pan, scraping bottom to get all the bits off, add Wozz! Sour Cherry Spiced Wine Fruit Compote and stir together. Continue to cook to reduce down until a thicker syrup consistency is achieved (careful not to burn once it starts to get bubbly). Once thick and syrupy stir in butter, a pinch of salt and cracked pepper.
Drizzle sauce over sausages and serve.
