Asian Chicken Salad with Ginger Soy Dressing and Sesame Toasts
This chopped Asian chicken salad is easy to make with just a few ingredients: Romaine, carrot, spring onion, chicken and our ginger soy infusion dressing. As a side we made these crazy good crispy sesame toasts which makes it a satisfying meal.
Serves: 2
Ingredients For Salad:
1 head Romaine chopped
2 Boneless Chicken Breasts
1 Tbs Avocado Oil
1 carrot julienned
3 spring onions sliced
Wozz! Ginger Soy Infusion Dressing
Black Sesame Seeds (optional for garnish)
Ingredients for Honey Sesame Toasts:
1 French Baguette sliced on an angle into thin (approx 1/4 inch) slices
Sesame Seeds white and black
1 Egg
Splash of Milk
Pinch of Salt
1 tsp Soy Sauce
1 Tbs Honey
To Make Asian Chicken Salad:
Preheat oven to 400 degrees F
Salt and Pepper Chicken Breasts
On grill pan on high heat, add avocado oil and grill chicken breast on each side for 2-3 minutes on each side (until you get nice grill marks) and then transfer to oven and bake for approximately 12 minutes (or until internal temp of chicken is 165 degrees)
Remove chicken from oven and let rest for 10-15 minutes. Once cooled dice chicken breasts into 1 inch pieces.
Chop Romaine and add to large bowl, add carrots, add chicken, add spring onions and toss with a good drizzle of Wozz! Ginger Soy Infusion Dressing. Add as much dressing to your liking.
To Make Honey Sesame Toasts:
In a shallow bowl, whisk egg, add milk, soy sauce, honey and pinch of salt. Whisk until honey is dissolved.
On a plate add a mix of white and black sesame seeds.
Dredge sliced baguette pieces into egg mixture, then coat both sides with sesame seeds.
In a fry pan on medium high heat, add 1-2 Tbs of avocado oil (enough to grease bottom of pan). Sear baguette slices on each side for approximately 1 minute. Remove.
Place salad in bowl, garnish with black sesame seeds if desired and serve sesame toasts on the side.
