Panzanella Salad with Spiced Beet Vinegar

Panzanella salad is such a hearty fresh summer salad. It takes 5 minutes to make, it's ideal for a summer picnic because It's rustic, delicious and gets better the longer it sits and with our Spiced Beet Vinegar it is amazing.

Whenever you have a salad with chunks of Ciabatta bread and fresh mozzarella thrown amongst your fresh picked summer garden veggies you can't go wrong. 


Ciabatta bread cut into 1-2 inch cubes
Fresh Mozzarella (I used mozzarella pearls)
Fresh Basil
Fresh red bell pepper
Fresh yellow bell pepper
Red Onion sliced
Cucumber (seeds removed if desired, cut cucumber in half and then each half lengthwise and deseed with spoon)
Fresh Tomatoes

Olive Oil
Salt & Pepper

Not much of a method, chop up your veggies and bread rustic style, throw it together, drizzle with olive oil, beet vinegar, add some salt and pepper and serve!

You can eat now or you can let it sit for a bit to soak up all the flavors.
