Kale Salad with Crispy Chickpeas and Japanese Sesame Miso Dressing
When making this kale salad it is important to toss the sesame miso dressing with the kale using your hands. You want to "massage" the kale to soften it and once dressed let it sit for 10 minutes prior to serving.
Kale Salad with Crispy Chickpeas and Japanese Sesame Miso Dressing
Serves 2:
1 bunch of Kale chopped
1 cans of chickpeas (rinsed and drained and blot of excess water with paper towel)
1 tsp Paprika
1/8 tsp Cayenne (basically just a pinch, you don't need much)
Olive Oil
Salt
Wozz! Japanese Sesame Miso Dressing
Preheat oven to 400 degrees F
Toss drained chickpeas with olive oil, salt, paprika and cayenne. Transfer to parchment paper on baking sheet and bake for approximately 30 minutes (until crunchy). Remove and cool.
Place chopped kale in large bow, add a good drizzle of olive oil and approximately 1/4 cup Wozz! Japanese Sesame Miso Dressing. Massage through with hands. Add extra Wozz! Japanese Sesame Miso Dressing until flavored to your liking. Toss through and set aside.
Arrange salad on plate, pour over crispy chickpeas and serve.
