Korean BBQ Beef and Noodle Stir Fry
A classic noodle stir-fry, full of veggies and bursting with color, sweetness and spice. We went with brown rice noodles, but you could swap them out for whichever noodles you have on hand. Hokkien noodles, ramen, buckwheat, wheat noodles or traditional Korean sweet potato noodles. The same goes for swapping out the beef with your preferred protein, be it chicken, shrimp, tofu or tempeh. This meal was super fast and delicious and the addition of fresh basil adds a really fresh pop to the dish.
Korean BBQ Beef and Noodle Stir Fry
Ingredients
8 oz Brown Rice Noodles
4 cups of Mixed Stir Fry Veggies - red pepper, red onion, carrot julienne, red cabbage (sliced thin) and spring onions (you can mix this up with shitake mushrooms, beans, broccoli, spinach and different sprouts if you wish)
1 cup Wozz! Korean Raspberry Gochujang BBQ sauce
1 lb Stir-fry beef - we used sirloin steak tips cut into stir-fry-sized strips. (Other options include flank steak, skirt steak, scotch fillet or even beef short ribs)
1 Cup losely packed torn basil leaves
2 Tbsp sesame oil or frying oil (vegetable, canola, coconut, avocado, or grape seed oil)
Method
1. Cook your Noodles
Follow the cooking instructions for the noodles you're using. (I usually go under the recommended cooking times for noodles and pasta by 1-2 minutes, but that's just me. Package said 8-10 minutes, I did 6.) Drain and rinse noodles under cold water to stop the cooking process and remove excess starch. Transfer to a large bowl.
2. Cook Your Veggies
In a thick-bottomed pan (large enough to hold all the ingredients at the end), heat 1 Tbsp of the sesame seed oil and heat until it shimmers. Sauté and stir-fry vegetables for 2 minutes starting with the onion and whites of the spring onions, next carrots and cabbage. Add 2 tablespoons of Wozz! Korean Raspberry Gochujang BBQ Sauce at the very end, stir through until evenly coated before transferring the veggies to the bowl of cold noodles.
3. Cook Your Beef
In the same pan, add the other tablespoon of sesame oil, allowing it to shimmer before adding the beef. Stir fry for 2-3 minutes.
4. Sauce Things Up
Add the remaining Wozz! Korean Raspberry Gochujang BBQ Sauce to the stir-fried beef, allowing it to come to a simmer, before sliding in the pre-cooked noodles and veggies.
Toss, toss, toss until everything is evenly combined and warmed through.
Finally, add the greens of the spring onions and basil (saving a little to sprinkle over top)
Serve immediately!
