This Cherry Cheese Dirt Cake is... everything you want it to be.

It's that good.

First you have chocolate graham crackers crumbled into melted butter.

Then you have the most delicious layer of whipped and sweetened marscapone and goats cheese.

Our tart yet sweet and spiced whole cherry spread is spooned over top.

and then you pile on the whipped cream.

 

It's like your 7 year old birthday party all over again.

 
Cherry Cheese Dirt Cake

I made my cherry cheese dirt cake in individual sundae glasses, I didn't make one large cake so if you are looking to make a large cake or trifle then you may want to double the recipe.  You can easily swap out the marscapone for cream cheese if preferred.  

 

Ingredients (makes 4 small trifles)

Marscapone Cheese  (8 ounces)
Goats Cheese (4 ounces)
1/2 cup Powdered Sugar
1 Cup Whipping Cream
Chocolate Graham Crackers (1 sleeve)
1 Stick Butter (melted)
Additional Whipped Cream for Topping (I used a canned whip cream to get the swirl top)
Wozz! Sour Cherry Spiced Wine Spread

In a food processor pulse your graham crackers until nice and crumbled.  

In a large mixing bowl stir together butter and crumbled graham crackers.  Set aside (this is your dirt).

In a separate mixing bowl, with an electric mixer beat together marscapone cheese, goats cheese and powdered sugar until nice and creamy. Remove mixture form bowl and set aside.  In same mixing bowl beat whipping cream with electric mixer until soft peaks form.  Fold your marscapone cheese mixture into whipped cream.

In a trifle cup or sundae cup (or whichever glass you choose) assemble your trifle.  Start with a layer of your chocolate graham mixture and pack down with fingers (it won't set because it's not baked so it will be more like packed "dirt").

Spread cheese mixture carefully over top. 

Add a layer of Wozz! Sour Cherry Spiced Wine Spread

Top with whipped cream.
