Healthy Salsa Verde Potato Salad

This potato salad, made with our kiwi lime salsa verde, is a delicious and healthy alternative to your usual mayo and egg potato salad.  I know you are probably saying to yourself "kiwi lime" salsa verde...but the fresh kiwi we use to make our kiwi lime salsa verde is only to add a vibrant fresh zingy flavor, it doesn't add a sweet kiwi flavor.  This salsa verde is so clean and only made with fresh ingredients:  fresh smoky jalapenos, fresh roasted tomatillos, fresh lime's super low calorie (about 80 calories in an entire jar!) and makes this potato salad just burst with tang and flavor.  Added to this recipe is some dijon mustard, olive oil, salt, pepper and fresh parsley.  The mustard gives it a nice bite and depth of flavor.

Healthy Salsa Verde Potato Salad Ingredients:

1 lb Small Red Skinned Potatoes cut into half and quartered (i cut the small ones in half, bigger ones I quartered)
1 lb Baby White Yukon Gold Potatoes cut in half and quartered
1/4 Cup Olive Oil
1/2 Cup Wozz! Kiwi Lime Salsa Verde
1/2 tsp salt
1/4 tsp pepper
2 Tbs Dijon Mustard
Fresh chopped parsley

Healthy Salsa Verde Potato Salad Ingredients:

Bring a pot of salted water to the boil.  Add your potatoes and boil for approx 10 minutes.

In the meantime, in a medium bowl, whisk together Wozz! kiwi lime salsa verde and mustard. Whisk in olive oil.  Add salt and pepper. Set aside.

Once potatoes are done boiling.  Drain and run under cold water.  Drain.

Add potatoes to bowl, toss with your salsa verde dressing, top with fresh parsley and season with additional salt and pepper if desired.  Serve warm or cold.
