Chickpea Salad with Shawarma Citrus Dressing

We love chickpea salads and this shawarma citrus dressing is a keeper that you will want to use over and over.  This salad is fresh, light, healthy and ready in 5 minutes flat.  Spices need to be cooked out to release the oils and flavors trapped within, and because we've already done that step for you in the making of our Middle Eastern Shawarma, you can get straight to creating this dish quickly.  Also, this citrus shawarma dressing with its layering of different citrus ingredients like our in house candied oranges and preserved lemons in the shawarma sauce along with added orange juice means this citrus dressing is full of fresh citrus pop.

Salad Ingredients (serves 2)

1x 15 oz Can Chickpeas (drained and rinsed) 
3/4 Cup Diced Cucumber - seeds removed 
1/2 Cup Diced Red Onion
1/2 Cup Loosely Packed Parsley - flat leaf - rough chop

Optional Ingredients

Artichokes
Olives
Fresh Mint
Tomato
Radish
Peppers

Dressing Ingredients

1 Tbsp Wozz! Middle Eastern Shawarma Marinade
1.5 Tbsp Orange Juice
1/4 Cup Cider Vinegar
2 Tbsp Olive Oil
Salt and Pepper

Method

Mix Your Dressing

Add all ingredients together in a bowl and whisk until they come together.  Set aside.

Build Your Salad

Drain and rinse your chickpeas, then add them to the bowl of dressing to let them marinade while you prep the other salad ingredients.

Partly peel (zebra style) about 4-inches worth of cucumber. This should be about 2/3 of a cup.  Remove the seeds and dice into size that is comparable in size of a chickpea.  Dice half a medium sized red onion similarly. Add the remaining salad ingredients and parsley to the bowl of chickpeas and season to taste with salt and fresh cracked pepper.

Serve 

* Sometimes during the winter months, we warm the chickpeas prior to adding to the dressing and additional ingredients just to warm up the salad a bit.  You can do this on the stovetop in a little water for a minute or so, then just drain off the water or you can microwave the chickpeas for 30 seconds or so.  Then add your dressing and additional ingredients to bowl of warm chickpeas and serve.
