Watermelon Mint and Feta Salad with Raspberry Red Wine Vinegar

Wozz and I spent about 3 hours on foot exploring lower Manhattan on a summer's day in 90 degree heat a couple years ago, we were so hot but thankfully stumbled upon the cutest little eclectic cafe, sat at their counter bar and ordered this salad and it couldn't have been more refreshing and delicious.  We still remember it, it was such a simple lunch salad but it was incredibly satisfying.  Cold watermelon and fresh mint salad on a hot humid day at a little counter bar in lower manhattan with a vintage wall fan blowing on our backs.  Perfect.

Watermelon Mint and Feta Salad with Raspberry Red Wine Vinegar

Ingredients:

Watermelon - cut into triangles, discard rind
Fresh Small Pickling or English Cucumber cut into matchsticks
Fresh Mint & Dill
Feta Cheese
Wozz! Raspberry Red Wine Vinegar
Mixed Greens 
Salt and Pepper

Method:

Arrange watermelon, add salad greens, cucumber, feta and fresh mint.  Season with salt and cracked pepper. Drizzle Wozz! Raspberry Red Wine Vinegar over top.  Enjoy!
