Grilled Peach and Arugula Salad with Bacon, Mozzarella and Balsamic Blueberry Vinegar
Juicy in-season peaches are what makes this salad an absolute late summer delight. It's light but full flavored with peppery arugula, crispy bacon, soft mozzarella, fresh blueberries, pecans and red onion...and it's all dressed up with our Balsamic Blueberry Vinegar.
Ingredients:
Fresh in-season ripe but firm peaches
Honey (to drizzle on peaches)
Arugula
Microgreens (optional)
Sliced Red Onion
Fresh Blueberries
Bacon (use thick cut bacon)
Fresh Mozzarella - sliced or torn into pieces
Pecans (toast in pan just until aroma develops)
Olive Oil (just a drizzle)
Wozz! Balsamic Blueberry Maple Vinegar
Salt and Pepper (to taste)
*I didn't include amounts of each ingredient because it's salad. Adjust amounts of ingredients based on your needs, how much of each ingredient you prefer and how many you are serving.
Method
Cook Your Bacon
Cook your bacon either in a hot pan on stovetop or in the oven. Remove and cut or crumble into 1/2 inch pieces. I used about 1 ration of bacon per salad plate.
Toast Your Pecans
On the stovetop toast your pecans on medium heat just until the aroma develops, remove and set aside. Cut into half size pieces.
Grill Your Peaches
Get your grill or grill pan nice and hot
Slice your peaches into quarters
Grill your peaches for approximately 4 minutes (flesh side down) turning to get get grill marks on each side of your peach quarters
Remove from grill and add a drizzle of honey to peaches
Dress Your Salad
In a bowl, toss your arugula, red onion, blueberries and pecans with olive oil and balsamic blueberry vinegar dressing. Season with a little salt and pepper to taste.
Arrange Your Salad Plates
Add tossed salad to individual plates, then add your other ingredients: Grilled peaches drizzled with honey, torn mozzarella pieces, bacon and microgreens (optional). Add a small extra drizzle of Wozz! Balsamic Blueberry Vinegar if desired.

Additional Tips:
You can swap out Mozzarella cheese for goats cheese, blue cheese or feta if you prefer a different type of cheese.
