Creamy Bruschetta Caponata Chicken
An unbelievably easy and delicious weeknight dinner. Chicken breasts are simmered in a creamy sauce made with our bruschetta caponata relish, fresh cherry tomatoes, basil, cream cheese, white wine and chicken stock. You can serve this over rotini pasta, orzo or rice. If looking to keep it low carb, simply serve as is with a garden salad or steamed vegetables.
Creamy Bruschetta Caponata Chicken
Ingredients
1.5 lb Chicken Breast
1/2 Cup Dry White Wine
1 Cup Chicken Stock
1 Jar Wozz! Bruschetta Caponata
1x 8 oz Block Cream Cheese
1/2 Punnet Cherry Tomato
Fresh Chopped Basil (garnish)
Oil
Salt and Pepper
Method
Preheat oven to 400 F
Slice chicken breasts into three or four pieces by making each cut at a 45 degree angle. Season with a good pinch of salt and pepper.
Add oil to large oven proof skillet and on medium high heat, brown chicken on both sides (about 3-4 minutes each side)
De-glaze the skillet with the white wine and reduce until almost evaporated.
Turn heat down to medium heat. Push chicken to the outside of the skillet to create a well in the center. Add the chicken broth and Jar of Wozz! Bruschetta Copanata, ensuring to spoon some over the chicken pieces.
Place the block of cream cheese in the center and break it up into smaller pieces with a small knife. Finish by adding cherry tomatoes.
Back on a medium high heat, bring the skillet and ingredients back up to a simmer before transferring to the hot oven. Braise uncovered for 15 minutes.
Remove from the oven and with a small whisk or spoon, stir the now soft cream cheese into the sauce. Move all chicken pieces and sauce around until everything is reasonable combined (it doesn't need to be perfect and will still look a little cottage cheesy in appearance)
Return skillet to the oven and continue braising for another 15 minutes.
Remove from the oven, garnish with chopped basil and serve.

*You can serve this with rotini pasta or bowties, orzo, mashed potato, rice or mashed cauliflower. However you want. If going low carb you can eat this without the starch alongside steamed vegetables and a garden salad.
