Herb Dukkah Chevre Crostini with Winter Spiced Fruits and Honey Confit
Fresh chevre is rolled in a homemade dukkah blend of fresh herbs, toasted nuts and seeds. The goats cheese is then cut into rounds and placed on top of the toasted baguette slices and finished with Wozz! Fruits and Honey Confit.
The dukkah in this recipe has a wide variety of nuts, seeds, spices and herbs, please note that this can be modified and simplified per your tastes or based on what fresh herbs, nuts and seeds you have on hand.
Herb Dukkah Chevre Crostini with Winter Spiced Fruits and Honey Confit
Ingredients:
French Baguette - sliced into 1/4 - 1/2 inch thick slices
Olive Oil
Salt Pepper
8 oz Fresh Chevre Log (Goats Cheese)
Dukkah Ingredients:
1 Tbs Fresh Sage leaves
1 Tbs Fresh Rosemary leaves
1 Tbs Fresh Parsley leaves
1 Tbs Fresh Thyme leaves
1 Tbs Fresh Marjoram
1/4 Cup Raw Almonds
1 Tbs Shelled Pistachios
2 Tbs Sesame Seeds
1 tsp Cumin Seed
1 tsp Fennel Seed
1 tsp Ground Coriander
1/2 tsp salt

Fresh Thyme and Rosemary for garnish
Recipe:
Preheat oven to 400 degrees F
Make Your Toasted Crostini Baguette Slices
Cut baguette into 1/4 inch to 1/2 inch thick slices. Brush both sides of baguette slices with olive oil and sprinkle with salt and pepper.
Line baking sheet with parchment paper, place crostini on baking sheet and bake until golden and crisp turning once. Careful not to burn. (cooking times may vary - if you have smaller bread slices it will be quicker, a heartier French loaf will take longer, so just check it often and remove from oven when toasted).
Make Your Dukkah
In a small pan on the stovetop, toast your nuts and seeds just until aromatic (exclude ground coriander and salt from toasting). Remove from heat.
In a small blender, add your toasted nuts and seeds, ground coriander, salt and chopped fresh herbs. Blend until finely chopped but not a paste.
Roll Chevre in Dukkah Herb Blend To Make A Crust
Add your herb dukkah blend to a flat tray or to flat surface to roll your goats cheese.
Roll your goats cheese log in the dukkah herb blend until nice and evenly coated.
Assemble Your Crostini and Serve
Once crostini are toasted, remove from oven.
Slice goats cheese into thin round slices with sharp knife (run your knife under hot water in between slicing to keep the cuts nice and clean)
To your toasted crostini, add a slice of the goats cheese round and top with a teaspoon of Wozz! Winter Spiced Fruit and Honey Confit Chutney.
Garnish plate of crostini with fresh thyme and rosemary leaves.
