Japanese Sesame Miso Roasted Carrots with Honey

Yum! I'm making this.

Japanese Sesame Miso Roasted Carrots with Honey

Wozz and I have been trying to eat a lot more plant based foods this past year and these Japanese Sesame Miso Roasted Carrots are an awesome roasted veggie side dish that is completely plant based.  The Japanese Sesame Miso Dressing adds a nice nutty creamy tang to the dish and the honey adds that bit of sweetness that goes famously well with carrots. We roast these carrots on a lower heat than traditional roasting temperatures to let the carrots really caramelize and sweeten up.  If you are in a hurry, you can always increase the roasting temperature to decrease the cooking time.

Japanese Sesame Miso Roasted Carrots with Honey

Fresh carrots (8 whole carrots peeled)
1 Tbs Avocado Oil
Salt & Pepper
1/4 Cup Wozz! Japanese Sesame Miso Dressing (plus a little extra to drizzle)
Honey (to drizzle)
Toasted White Sesame Seeds (to garnish)

Preheat oven to 350 degrees F

Toss carrots with avocado oil and season with salt and pepper

Place on baking sheet and roast carrots for approximately 40 minutes

Remove from oven and toss carrots with 1/4 cup Wozz! Japanese Sesame Miso Dressing

Return to oven and roast for additional 20 minutes

Remove from oven, plate up the carrots and drizzle with a little extra Wozz! Japanese Sesame Miso Dressing and a drizzle of honey.  Garnish with toasted sesame seeds.
