Our Bruschetta Caponata is a savory, mildly sweet and tangy Sicilian relish made with fresh seared eggplant, tomatoes, red peppers, green olives, fresh garlic and capers. This caponata relish is aptly named as it is just perfect as a condiment atop bruschetta, grilled breads and crostini. Delicious spooned over grilled tuna steaks and salmon and a fantastic relish for veggie burgers, sausages, paninis and grilled cheese.
We only use dates to sweeten this relish so it has no added sugar if you are looking for a sugar free or low sugar condiment and it has a nice tang from red wine vinegar and lemon. Fold our caponata relish through quinoa or couscous for a quick healthy side dish or serve atop grilled summer veggies such as zucchini or portobella mushrooms with crumbled feta or ricotta cheese for a healthy veggie dinner.
