Grilled Zucchini with Bruschetta Caponata Relish and Shaved Parmesan

Healthy, light, easy and delicious.  Thinly sliced zucchini ribbons are lightly grilled and served with our Bruschetta Caponata Relish and shaved Parmesan.  Add a little drizzle of olive oil, fresh parsely and salt and pepper to finish it off.  This recipe is sure to transform your grilled summer zucchini into something a little more special and if you are not a fan of grilled zucchini you can substitute with grilled summer squash, asparagus, eggplant or grilled mushrooms.

Grilled Zucchini with Bruschetta Caponata Relish and Shaved Parmesan

1 Zucchini - thinly sliced on a mandolin 
2 Tbsp picked Italian parsley
2 Tbsp shaved Parmesan
2 Tbsp Wozz! Bruschetta Caponata Relish
Squeeze of Fresh Lemon
Salt and Pepper
Olive Oil - drizzle

Method:

1.  Season each slice with salt and pepper and a little olive oil.  Turn your grill pan to medium high heat, and grill zucchini on one side only. Set aside.

2.  Arrange zucchini ribbons on a small serving platter. Top with small dollops of Wozz! Bruschetta Caponata Relish, shaved Parmesan and fresh parsley.  Add a little extra drizzle of olive oil, a squeeze of 1/4 of a fresh lemon, add a little salt and pepper and serve.
