Pepper Jelly Corn Relish
This jalapeno pepper jelly corn relish is sweet tangy and has a medium spicy kick. We use our Green Tomato Jalapeno Pepper Jelly in this recipe which adds plenty of zip and spice! Serve this relish with your summer barbecue burgers, sausages and hot dogs or as a dip for corn chips.
Ingredients:
1 Large Ear Corn husked and kernels cut off
1/2 Red Pepper diced
3/4 Cup Wozz! Green Tomato Jalapeno Pepper Jelly Spread
Salt and Pepper
Recipe:
In a cast iron skillet on medium high heat, add 1 tablespoon of water. Once nice and hot add your corn kernels and diced red pepper. Cook just a minute or so until corn is cooked through. Stir in Wozz! Green Tomato Jalapeno Pepper Jelly. Once dissolved through, immediately remove from heat and transfer to bowl to cool. Season with salt and pepper to taste.
Transfer to fridge, allow to cool for at least an hour. Serve chilled.
We like to serve this with corn chips, over cream cheese, mixed into a corn relish dip or atop sausages, hot dogs, grilled chicken and veggie burgers.
Notes*
This corn relish can also be mixed into cream cheese and sour cream to make a creamy corn relish dip {recipe here}.
You can substitute frozen or canned corn if desired just omit the tablespoon of water in cast iron skillet prior to cooking.
