Ginger Soy Caramelized Chicken

This is a delicious must-try meal that is so easy you'll facepalm yourself and wonder what you have been doing with your life.  The chicken braises on the stove top in just over 10 minutes resulting in a deliciously sweet caramelized chicken with a savory balance from the fish sauce.  From there, you can serve with rice, lettuce wraps, over salad, slaw or in Asian tacos.

Ingredients:

2 lb Boneless Chicken Thighs (dice into large pieces - approximately 2 inch pieces)
1.5 Tbsp Fish Sauce
1 Tbsp Soy Sauce
3 Tbsp Vegetable oil, (avocado, coconut, grape seed oil)
1 cup Wozz! Ginger Soy Sauce

Jasmine Rice (if serving with rice)
Sliced green onions for garnish (optional)

Method:

Marinate Your Chicken and Cook Your Rice

Marinate the chicken in the fish sauce and soy sauce while you prepare your rice.  You could marinate longer or overnight but it's not necessary.

The Rice:  A tip for cooking rice, which is what we do every time - boil 1.5 times the amount of liquid to the amount of rice you are cooking.  So if you are making 1 cup of rice, add 1.5 cups of water or stock.  Wash excess starch out of your rice first. Add the appropriate water to rice ratio to a suitable sized pot with a tight fitting lid. Bring up to a boil, then turn heat down to a low simmer, cook for 10 minutes with lid on.  Turn heat off, leave lid on and do not disturb for another 10 minutes.  Fluff with fork.  Otherwise you can always follow package directions. 

Braise Your Chicken

Heat the oil in a thick-bottom pan on medium heat, add the chicken and cook just enough to change the color of the chicken from pink to white all over.  We don't want to brown the chicken or cook it through.

Add the Wozz! Ginger Soy Infusion Sauce and bring to a simmer.  We want to cook, continuously folding the chicken through as the sauce reduces and thickens to a nice caramelization.  Depending on your pan size and stove heat, this should take 10-12 minutes.

Serve

Serve piled high on a bed of rice, garnished with spring onions.

You can also serve this with your favorite vegetable side, as part of a salad or lettuce wraps, in Asian tacos with crunchy slaw or with noodles.
