Peanut Salmon Bowls
If you are trying to eat more salmon, we've made it easy for you. Simply cut salmon into pieces, drizzle with our Cambodian Coconut Peanut Sauce and broil. Finish it off in a bowl of rice and salad, drizzle more delicious creamy peanut sauce over top, add a little squeeze of fresh lime and voila! An easy healthy weeknight dinner, packed with omega's, protein, greens and it's incredibly delicious.
Ingredients:
1 lb Salmon - cut into 1-2 inch dice (skin removed)
Pinch Salt
1/4 cup Wozz! Cambodian Coconut Peanut Sauce for marinade+ additional peanut sauce for drizzling
1 Cup Jasmine Rice
Cilantro springs
Avocado sliced
Cucumber slices or ribbons
Crushed Peanuts
Green Onions sliced thin
Recipe:
1. Preheat Oven
Preheat your oven to 450 degrees F.
2. Marinate the Salmon
Season salmon pieces with a pinch of salt. Combine the diced salmon and Wozz! Cambodian Coconut Peanut Sauce and allow to marinate for 20 minutes at room temperature.
3. Cook the Rice
Cook rice according to package directions.
4. Broil your Salmon
Spread your marinated salmon over a parchment paper lined baking tray and add to the top shelf.
Broil on high for 10-12 minutes until salmon is cooked through to your liking and there is a little browning on top but still flaky and juicy.
(cooking times vary depending on thickness of salmon pieces and types of salmon (fattier richer salmon will take longer to cook out vs leaner salmon will dry out quicker so just keep an eye on your cooking time)
5. Arrange Your Salad Bowl and Serve
Add cooked rice to your bowl, top with broiled salmon pieces, add sliced avocado, cilantro, green onions and cucumber to bowl. Add an extra good drizzle of Wozz! Cambodian Coconut Peanut Sauce over top of salmon along with crushed peanuts. Serve with fresh lime wedges.
