Grilled Rustic Bruschetta with Caponata

Yum! I'm making this.

Rustic Italian bread char grilled and topped with our Bruschetta Caponata Relish.  A simple appetizer delicious with a chilled glass of chardonnay or pinot grigio.  Our Bruschetta Caponata is a Sicilian relish made with fresh seared eggplant, tomatoes, red peppers, garlic, capers, red wine vinegar and fresh lemon.  A finishing drizzle of olive oil, salt, pepper and a few sprigs of fresh greens finish the plate.  A "no need to think about it" summer evening appetizer. 

Grilled Rustic Bruschetta with Caponata 

Ingredients:

Italian Rustic Loaf - we used Pugliese Italian Bread cut into 1 inch thick pieces
Garlic Cloves
Olive Oil
1 Jar Wozz! Bruschetta Caponata Relish
Burrata Cheese or Ricotta Cheese
Fresh Parsley and Thyme Chopped (optional for garnish)
Salt & Pepper

Grilled Rustic Bruschetta with Caponata Method:

Preheat grill on high heat.

Slice bread into 1 inch thick pieces.  Brush with olive oil and rub with fresh garlic clove.  Season with salt and pepper.

Grill bread slices each side on high heat for 2 minutes or until nice grill marks. Remove from heat.

Top each slice of bread with either burrata cheese or ricotta (we didn't have ricotta but we had burrata so we just cut 1 burrata open and spread onto bread).  

Generously top with Wozz! Bruschetta Caponata, garnish with fresh chopped parsley and thyme, salt pepper and a drizzle of olive oil.
