Japanese Sesame Miso Roasted Carrots with Honey
Wozz and I have been trying to eat a lot more plant based foods this past year and these Japanese Sesame Miso Roasted Carrots are an awesome roasted veggie side dish that is completely plant based. The Japanese Sesame Miso Dressing adds a nice nutty creamy tang to the dish and the honey adds that bit of sweetness that goes famously well with carrots. We roast these carrots on a lower heat than traditional roasting temperatures to let the carrots really caramelize and sweeten up. If you are in a hurry, you can always increase the roasting temperature to decrease the cooking time.
