Bruschetta Caponata Butter Bean Salad

We personally love our bean and pulse salads and this simple bean salad can be ready to serve in minutes.  Our Bruschetta Caponata is full of all your favorite flavors of the Mediterranean. Slow cooked roasted garlic and eggplant, enriched with caramelized peppers, onion and tomato before finishing with the bright salty notes of briny green Sicilian olives and pickled capers.  This makes a favorite, a cinch in a pinch plus with all the full flavor you'd expect from your favorite Sicilian bottega alimentare.

Bruschetta Caponata Butter Bean Salad


16 oz can Large Butter Beans - drained and rinsed.
1/4 cup Wozz! Bruschetta Caponata Relish
1 Tbsp Parsley - rough chop
1 Tbsp Red Wine Vinegar
1 Tbsp Good Olive Oil
Squeeze of a 1/4 Fresh Lemon 
Pinch of Salt and Pepper (season to your liking)


Simply combine all ingredients, gently folding them together so as not to break the beans.  Set aside for 20 minutes to an hour before serving to let the flavors infuse.
