Grilled Pita with Halloumi, Pickled Beet Relish and Salad Greens
An easy weeknight grilling option that is healthy, super flavorful and simple to make. Ingredients
Pita Bread
Olive Oil
Halloumi (Sliced into 1/2 inch slices)
Wozz! Indian Spiced Pickled Beet Relish
Greek Yogurt
Hummus
Sliced Cucumber
Red Onion Slices
Arugula or Mixed Salad Greens
Salt and Pepper
Fresh Chopped Parsley (for garnish if desired)
Recipe
Get your grill hot.
Slice halloumi into 1/2 inch thick slices. Set halloumi on paper towels to absorb extra moisture. Brush both sides with olive oil, and grill for approximately 3-4 minutes on one side. I only grilled one side as it does start to get soft on the outdoor grill and it will stick so be careful, you can use a griddle plate if that is easier. If you are using a grill pan on the stove, you can flip the halloumi and grill the other side.
Brush olive oil on 1 side of pita bread. Grill your pita bread on the oiled side for approximately 1-2 minutes (until golden brown with grill marks). We only grill our pita on 1 side only. I find if you grill both sides, it will be too crunchy - grilling on 1 side allows a nice grilled side with a soft warm side, making it ideal for a sandwich that you can fold.
To grilled pita, add plain Greek yogurt (or feel free to make a tzatziki sauce if desired), add sliced cucumbers, hummus, Wozz! Indian Spiced Pickled Beet Relish, your grilled halloumi slices, sliced red onion and fresh arugula or mixed salad greens. Add a pinch of salt and pepper and fresh chopped parsley. Serve.
