Grilled Chicken with Moroccan Tomato Relish and Feta
If you are looking for a simple way to jazz up chicken for a quick lunch or dinner, this recipe could not be simpler. It's hardly even a recipe, you just grill up chicken, top it with our Moroccan Tomato Onion Relish and sprinkle some feta cheese crumbles over top. That's it. Serve it with a salad of fresh greens - I like baby spinach or arugula for this. If you are someone who grills up chicken breasts ahead of time to keep in the fridge for grab and go meals, this recipe is ideal because it tastes great cold and it's low carb. Our Moroccan Tomato Relish has only 3 g of sugar per 2 Tbs (less than ketchup!).
Grilled Chicken with Moroccan Tomato Relish and Feta
Ingredients:
Thin chicken breasts (or full size chicken breasts butterflied in half and pounded out with rolling pin.)
Olive Oil
Salt & Pepper
Wozz! Moroccan Tomato Onion Relish
Feta Cheese Crumbles
Arugula or Baby Spinach
Method:
Brush chicken breasts with olive oil and season with salt and pepper.
Turn your grill onto medium high heat, oil grate and grill each side of chicken for approximately 5-6 minutes on each side, until nice grill marks appear and chicken is cooked through and juices run clear. (if you are using thick chicken breasts your cooking time will be longer).
Once cooked remove from heat, top each breast with a tablespoon of Wozz! Moroccan Tomato Onion Relish, serve on a bed of greens and sprinkle with feta cheese and cracked pepper.
