Herb Crusted Pork Tenderloin with Sweet Onion Braised Apples
Juicy pork tenderloins are seasoned with fresh herbs and mustard and braised in a pan sauce of tart green apples and Wozz! Triple Ale Onion Jam Spread. The flavors meld together producing a sweet caramelized onion and tangy apple sauce over the herb crusted pork. It's tender, juicy, flavorful and perfect for the Fall season.
Ingredients:
2 Pork Tenderloins (about 3 lb total)
2 Green Apples (peeled, cored and cut into 8 wedges)
5 Tbsp Wozz! Triple Ale Onion Spread
2 Tbsp Dijon Mustard
4 Tbsp Chopped Fresh Herbs (Fresh Parsley, Sage, Thyme and Rosemary)
2 Tbsp Butter
Salt and Pepper
Method:
Preheat Oven to 425 F
1. Prep your Tenderloins
Season each loin with salt and pepper. Evenly spread the chopped herbs over the loins. Wrap in parchment paper or plastic wrap and set aside (refrigerate) for 1 hr.
2. Prep Your Apples
In a thick bottom skillet on medium heat, add the butter and allow to melt. Add your prepped apple wedges and caramelize on each side. 1 minute on each side should be enough. Add Wozz! Triple Ale Onion Jam. Toss ingredients together until combined, transfer to a bowl, and set aside for later.
3. Sear The Tenderloins
Add olive oil to the same pan on medium-high heat. Add pork tenderloins to pan and brown on each side for 2-3 minutes.
(if your skillet is ovenproof, continue the remaining steps in your skillet. Otherwise, transfer tenderloins to a ceramic dish or suitable roasting pan)
4. Prepare For Braising
Brush or rub the Dijon mustard over the tenderloins. Return the previously set aside apple and onion mixture to the skillet or dish with the tenderloins ensuring a little of the mixture is placed over the top of the pork. Cover with foil or a lid.
5. Braise Pork Tenderloins in a Hot Oven
Transfer to a 425F preheated oven on the middle rack. Cook for 20 minutes or until the internal temperature reaches 145 degrees F in the thickest part. Allow to rest for 5 minutes covered. (*oven cooking times vary- you may want to check internal temp of pork at its thickest part after 12-15 minutes)
6. Carve and Serve
Carve the tenderloins in 1/2-inch thick diagonal slices. Spoon the apple onion sauce over the pork. Serve with your favorite rice, potato and vegetable sides.
