Indian Spiced Beet Hummus
Homemade hummus with a touch of our signature condiment, Indian Spiced Pickled Beet Relish - it not only turns this hummus into a bright pink dip but adds a nice subtle aromatic spiced beet taste to the hummus. I topped this with a quick and easy mint walnut pesto and drizzled it with olive oil prior to serving. Tasty and flavorful, this beet hummus can be served with crackers, vegetables, pita or naan. It's also delicious when used as a veggie sandwich spread.
Indian Spiced Beet Hummus
Ingredients For Hummus:
1 can chickpeas (drained - set aside the chickpea juice to use in your hummus)
3 Tbs Olive Oil
Juice of 2 Large Lemons
1 tsp salt
2 medium garlic cloves or 1 large garlic clove
1/4 cup tahini (sesame paste)
1/3 cup Wozz! Indian Spiced Pickled Beet Relish
For Mint Walnut Hummus Topping:
1 Tbs Olive Oil + additional for drizzling
Chopped Fresh Mint (approximately 8 mint leaves)
Chopped Walnuts (a handful)
(combine ingredients and set aside for topping)
How To Make:
In a food processor, add lemon juice and 2 cloves garlic and pulse until finely chopped. Add chickpeas, tahini, salt, 1/4 cup of chickpea juice, Wozz! Indian Spiced Pickled Beet Relish and olive oil and puree until smooth. With the machine running, stream in additional chickpea juice or olive oil until hummus is nice and smooth. Season with additional salt if desired.
Spoon hummus into bowl for serving, drizzle with olive oil and top with mint walnut pesto. Add a sprinkle of salt and pepper.
Serve with sides of your choice - warm naan bread, vegetables, pita chips, crackers.
