Moroccan Tomato Pearl Couscous
This Moroccan Tomato Pearl Couscous is a simple plant based side dish that is packed with rich Moroccan flavors and easy to make. I like to use pearl couscous as an alternative to regular couscous because I find the texture a little more smooth and velvety, less grainy than traditional couscous. You can construct this dish two ways, making it either hot or cold. You can make a rich stew-like couscous by simmering the couscous in the Moroccan Tomato Onion Relish / Simmer Sauce or you can first cook the pearl couscous in water, drain it off with cold water and then fold in the Moroccan Tomato Onion Relish and garnish with some fresh herbs. The latter would be great if you want to do a lighter summer style couscous salad, keeping the dish cold rather than hot. For this particular recipe, I cooked the couscous in with the Moroccan Tomato Onion Sauce so it was nice and thick and rich. It paired famously well with these Chermoula Marinated Chicken Thighs and it is the middle of winter here in the white mountains of NH so tis' the season for warming winter comfort food.
