When your seafood is this fresh and good, a simple brown butter sauce is more than perfect. Makes me feel I'm back on the French Rivera. A great sauce for fish and shrimp. Add your favorite herb and fresh or fried capers to make it your own.

I know what your thinking, um grapes??? Look, I usually don't do hot fruit in food either, but these little bad boys make for a great sauce when it comes to pork. We've road tested this recipe with sausages, chops and tenderloin and they all came out exceptional.

Beer Battered Fish and Chips. An Aussie classic traditionally served on newspaper beach side with nothing but the squeeze of fresh lemons and of course some malt vinegar for your fries. They now put a film over the newspaper so the ink doesn't rub off but when I was a kid things weren't so strict. It was always pretty funny to pick up a chip and see a word imprinted on it. I included a recipe for fresh lemon dill tartar sauce for all my friends in the US of A that prefer that as a dipping sauce.
