Pulled Pork Banh Mi Sandwich with Orange Ginger Relish
This classic Vietnamese sandwich gets a little Thai citrus twist when we add our savory Thai Orange Ginger Relish to the recipe. 1/2 a jar of the Thai Orange Ginger Relish is added to the cooking liquid for the pork in the crockpot and the remaining 1/2 a jar is used as a relish to spoon onto the sandwiches. On a chewy crusty French Baguette, we add the pulled pork, fresh cilantro, mayo, microgreens, sliced red onion and the Thai Orange Relish. These sandwiches turned out really really good and reminded me to use the crockpot more often because it's makes life so much easier!

1/4 Fresh Red Chili

The remaining 1/2 Jar Wozz Thai Orange Ginger Relish
Red Onion - thinly sliced
Sesame Seeds For Garnish (optional)
Method:
Salt and pepper your pork shoulder.
In a large skillet on medium high heat, sear the pork on all sides until browned on each side.
Transfer pork to crockpot.
Add water, orange juice, 1/2 Jar Wozz Thai Orange Ginger Relish, garlic cloves and 1/4 fresh red chili to crockpot. Simmer on low for approximately 6-8 hours.
Once pork is finished, remove from liquid and shred with fork.
Make Your Sandwiches:
Cut your French baguette into approximately 5 inch sandwich length sections and slice in half lengthwise.
Lightly toast your baguette in the oven, just to get the top of the bun a little crispy and warmed through.
Assemble your sandwich: Add a layer of mayo to bottom, then top with cilantro, pulled pork, Wozz Thai Orange Ginger Relish, sliced red onion and pea shoots. Close up your sandwich and enjoy!
Additional Notes:
*You can also add a little sriracha or chili to your mayo if you prefer it spicier.
*No need to add pickled carrot to the sandwich because our Thai Orange and Ginger Relish includes fresh carrot, vinegar and chili in the relish. :)
*If you are trying to cut the carbs and are not eating bread, you can add the pulled pork and all the toppings to lettuce wraps and ditch the bun. Our Thai Orang and Ginger Relish is low in sugar with 3 g of sugar per serving so it's pretty keto friendly!
*If you are cooking for a larger crowd and need to double the recipe, I suggest 2 jars of the Thai Orange Ginger Relish - add 1 whole jar to the crockpot and use 1 jar to spoon the Orange Ginger Relish onto the sandwiches.
