If chocolate were savory, it would taste like this. Sweet, sticky and wonderfully moreish.
Ingredients
Whole rack of baby back pork ribs.
Basting Sauce 1/2 cup hoisin sauce 1/4 cup oyster sauce 1/2 cup pineapple juice 1 tbs Super Hot Chilli Sambal 1/4 cup white vinegar 1/2 cup brown sugar 1/2 Juice Lime |
Simmering Water Cinnamon Stick 10 Cloves 1Lemongrass (split) 1inch Ginger (sliced) 1/2 cup white vinegar Chilli split |
Recipe
Fast Method:
1. Cut rack in half and place in a pot large enough so that when filled with water, the ribs are covered.
2. Salt the water with a good pinch of salt and add all other simmering ingredients. Bring to the boil before reducing the heat down to a low simmer. Cover with a lid and leave for 2 hours or until meat begins to fall away from the bone.
(From this point ribs can be cooled and refrigerated a day or two in advance)
3. Mix ingredients from the marinade and baste over both sides of the ribs, save a little to add through out the broiling or roasting.
4. Broil for 15 minutes (don't let them burn!!) or Roast at 150C for 45 minutes. Stopping to add more marinade mixture every 10 minutes or so.
