Wild Rice Harvest Salad with Cider Mustard Vinaigrette

A harvest salad that echoes the season of Fall!  Chopped kale with sweet delicata squash, wild rice tossed with our Winter Spiced Fruits and Honey Confit, chopped honeycrisp apple, celery, red onion, crumbled cheese - all dressed up with a cider mustard vinaigrette.

Ingredients:

1 Delicata Squash
1 Tbs Light Olive Oil
Pinch salt
1 tsp Ras el halnout or Garam Masala blend

1 Honeycrisp Apple diced
2 Stalks Celery chopped
1 Medium Red Onion diced

Kale 1-2 large bunches (about 12-15 large leaves) chopped small
Crumbled Goats Cheese or Feta {whichever you prefer}

1 Cup Wild Rice Blend (cooked to package directions)
1/3 Cup Wozz! Winter Spiced Fruits and Honey Confit

Cider Mustard Vinaigrette Ingredients:

3 Tbs Olive Oil
3 Tbs Apple Cider Vinegar
2.5 Tbs Wozz! Southern Style Rustic Mustard
good pinch of salt
cracked pepper

Method: 

Make Your Cider Mustard Vinaigrette

Add dressing ingredients to a small bowl and whisk or put in a small jam jar, add the lid and give it a good shake.  Set aside.

Prep, Season and Roast Your Delicata Squash

Cut squash in half length ways and remove the seeds.  Slice each half into half moons slices about 3/4 inch thickness.

Toss with a pinch of salt and a tsp of Ras el halnout or Garam masala.  Allow to sit for a few minutes before tossing in the olive oil.

Roast squash at 425F for 25 minutes or until tender, golden and cooked through.

Season Your Wild Rice

Cook your rice according to package directions.  Fluff and then let cool for a few minutes.  Add to a bowl and toss with 1/3 cup of Wozz! Winter Spiced Fruits and Honey Confit.

Dress Your Chopped Kale

Add chopped kale to a medium sized bowl and toss with 1/2 of your cider mustard vinaigrette, massage the kale so it's soft and dressed. (leave the other half of the dressing for later)

Make Your Salad Bowls:

Add dressed kale to bottom of bowls, in sections add chopped apples and celery, add red onion, add roasted delicata squash, add wild rice with fruits and honey and crumbled cheese.   Dress with additional cider mustard vinaigrette, toss ingredients together and serve.
