Sweet Chili Salmon Bowl with Avocado Cilantro Lime Sauce
This recipe is the complete package. You've got delicious juicy salmon marinated and glazed in our Sweet Chili Orange Sesame Sauce, you've got rice to add some texture and soak up any extra sauce, you've got a creamy tangy avocado cilantro lime sauce, crunchy healthy edamame beans and a nice herb salad with a touch of soy and lemon juice. This sweet chili salmon recipe is a STUNNER.
Sweet Chili Salmon Bowl with Avocado Cilantro Lime Sauce (serves 2 generously)
Ingredients:
For Your Salmon:
1 lb Salmon Fillet (we used 3 (5 ounce) fillets with skin off - diced into 1.5 inch pieces)
1 tsp Paprika
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
Pinch Salt & Pepper
2 Tbsp Wozz! Sweet Chili Orange Sesame Sauce
For Avocado Cilantro Sauce
6 Sprigs Cilantro rough chop (1 Tbsp tightly packed)
1/2 Avocado
Juice 1.5 Limes
1 Spring Onion sliced
1 tsp Soy Sauce or Tamari
To Make Avocado Cilantro Sauce: Place all ingredients in a food processor (I use a smoothie blender) and blend. You can chop all ingredients together on a chopping board until you reach your desired consistency (chopping will result in more of a salsa than a creamy sauce)
1 Cup Dry Basmati Rice
For Your 3 Herb Salad:
1/2 cup Dill loosely packed
1/2 cup Cilantro loosely packed
1/2 cup Watercress loosely packed
Dressing For Your 3 Herb Salad:
1 tsp Soy Sauce
1 tsp Lemon Juice
To Make 3 Herb Salad: Add dill cilantro and watercress to bowl. Stir together soy sauce and lemon juice. Dress your salad. Set aside.
Garnish:
1/2 cup Shelled Edamame Soy Beans (we buy them frozen and let them thaw)
Toasted Sesame Seeds
Sliced Cucumber (if desired)

Method:
Preheat oven to 450 Degrees F
Mix together the dry spice ingredients, salt and pepper. Sprinkle over your diced salmon pieces and toss until the salmon is evenly coated. Allow to sit for 10 minutes.
At this stage start cooking your rice. Cook according to package directions and fluff when done cooking.
Toss the diced seasoned salmon pieces with Wozz! Sweet Chili Orange Sesame Sauce and again allow to marinade for 10 minutes before baking.
While this is marinating, pick the greens for your herb salad and make the avocado cilantro lime sauce (instructions above for both). Set aside.
Spread the now marinaded salmon on a baking tray lined with parchment paper, ensuring there is even spacing between the salmon pieces.
Bake at 450 F for 10 minutes.
After 10 minutes the salmon is cooked through and ready to serve but to really caramelize the salmon, we added a little extra Wozz! Sweet Chili Orange Sesame (about a tablespoon) and gave it a quick flash under the broiler on Hi for about 3-4 minutes. Bunch the salmon together so it broils evenly.
Remove the salmon from the broiler. Spoon rice onto your bowl or plate, top with salmon, add herb salad and a side of avocado cilantro lime sauce. Garnish with edamame and toasted sesame seeds.
Serve.
