So I had dinner at this casino coming home from NY and after losing $40 on the Betty White Twisted Tales Slot machine (as you can see I am a high roller), this strawberry pecan salad I ordered just hit the spot. Casinos...they are weird. Fun for a minute and then you start to look around...
Wozz and I stopped to have dinner as we were passing through on the freeway and there wasn't much else around. I had this salad and thought our Strawberry Rhubarb Vinegar would be the perfect dressing for it, so today I recreated it and it was delicious. Fresh juicy strawberries, mixed greens, pecans, red onion, golden raisins and pecans, topped with grilled chicken and drizzled with our handcrafted slow infused Strawberry Rhubarb Vinegar.
Strawberry Salad with Grilled Chicken and Pecans
Ingredients:
1 Large chicken breast (butterflied in half) or 2 thin chicken breasts (1 breast for each serving)
Fresh Strawberries sliced
Red Onion sliced thinly
Golden Raisins
Mixed Greens
Feta Cheese
Wozz! Spiced Strawberry Rhubarb Vinegar
Method:
Season chicken breasts with salt and pepper. In a medium bowl add chicken breasts and a few drizzles of Wozz! Strawberry Rhubarb Finishing Vinegar (enough to coat the breasts). Put in fridge to marinate for 20-30 minutes.
Slice up your strawberries and place in a small bowl. Add a drizzle of Wozz! Spiced Strawberry Rhubarb Vinegar to coat them and set aside.
Brush grill pan with olive oil, on medium high heat, grill chicken breasts for 2-3 minutes on each side (they should be thin and cook fairly quickly - if you are using a thicker chicken breast then adjust grill time so chicken is cooked through).
Once chicken has finished cooking, remove from grill and slice.
Arrange your salad greens, add sliced red onion, golden raisins and sliced grilled chicken. Spoon your marinated strawberries over top and finish with chopped pecans and feta cheese. Drizzle with additional Wozz! Spiced Strawberry Rhubarb Vinegar.
