Strawberry Spinach Salad with Strawberry Vinegar Dressing
Tis the season for fresh juicy strawberries from the farmer's market! June is the perfect month for a spinach strawberry salad with crispy bacon, feta, pecans, red onion and our Spiced Strawberry Rhubarb Vinegar to dress it all up.
Strawberry Spinach Salad with Bacon and Strawberry Vinegar Dressing
Ingredients:
Baby Spinach Leaves (a bag is about 5-6 ounces)
4-5 Rashes Bacon cooked and chopped
1/4 small Red Onion thinly sliced
Pecans - toasted
Crumbled Feta
Fresh Strawberries sliced
Wozz! Spiced Strawberry Rhubarb Vinegar
Olive Oil
Method
1. Marinate Your Sliced Strawberries with Wozz! Strawberry Rhubarb Vinegar
Fill a small bowl with 2 tablespoons of Wozz! Strawberry Rhubarb Vinegar, add your sliced strawberries and let marinate for 15 minutes.
2. Cook Your Bacon
While your strawberries are marinating, cook your bacon and chop into pieces.
3. Toast Your Pecans
Toast your pecans in a dry skillet on stovetop for a few minutes until nutty aroma develops. Be careful not to burn. Remove and chop to your liking (we left some of ours whole but chop into whichever size you prefer).
4. Arrange Your Spinach Salad
Add your spinach salad greens to serving platter, remove strawberries from vinegar and top salad with marinated strawberries, bacon and toasted pecans. Right before adding red onions, quickly mix them in the same Strawberry Vinegar bowl that you used to marinate the strawberries (just to give them a quick coating of the strawberry vinegar as well), then add them to the salad. Top with crumbled feta.
5. Dress Your Salad
Mix a tablespoon of olive oil into the leftover strawberry vinegar marinade along with a couple more tablespoons of Wozz! Strawberry Rhubarb Vinegar. Whisk and dress salad.
