Chicken Walnut and Feta Salad with Balsamic Blueberry Vinegar
Our Balsamic Blueberry Maple Vinegar made with wild Maine blueberries and pure maple syrup is the perfect dressing for this chicken and walnut salad. With the addition of fresh mint leaves, feta cheese, avocado and plump juicy blueberries, this is a quick, healthy and delicious lunch option. I used shredded rotisserie chicken breast which is an easy way to add a little bit of protein to your salads without having to grill up chicken breasts.
Chicken Walnut and Feta Salad with Balsamic Blueberry Vinegar
Ingredients:
Shredded Rotisserie Chicken (as much as you want for your salad)
Salad Greens (I used arugula and tender lettuce greens)
Fresh Mint Leaves (a few scattered throughout your lettuce greens for a little bit of fresh mint pop)
Red Onion Sliced
Walnuts
Crumbled Feta Cheese
Wozz! Balsamic Blueberry Maple Vinegar
How To Make:
In a large bowl, toss your salad greens, mint, sliced red onion and shredded chicken with a good drizzle of Wozz! Balsamic Blueberry and Maple Vinegar. Arrange on plate and top with walnuts and crumbled feta cheese. Serve with additional Wozz! Balsamic Blueberry Vinegar if desired.
