This traditional Moroccan marinade is a fusion of fresh lemon, fresh chopped cilantro, olive oil and a medley of bold spices including cumin, ginger, turmeric, garlic and saffron.  Zingy and fresh, this authentic Moroccan sauce can be used when making a lamb or chicken tagine and is a traditional marinade for fish and seafood.  Delicious as a dressing for couscous and warm lentil salads or drizzled over grilled lamb chops.

Moroccan Tomato Onion Relish and Simmer Sauce 

An intensely flavored tomato simmer sauce bursting with aromatic Moroccan spices including cumin, fennel, garlic and ras el hanout.  A full flavored cooking sauce for Moroccan style chicken or braised short ribs and makes a delicious Moroccan inspired pasta sauce for beef or lamb ragu.  Stir this sauce into couscous, add to a crockpot chickpea and chicken stew or use as a Moroccan pizza sauce (try this recipe for Moroccan lamb pizza).  Also delicious as a simmer sauce for North African Shakshuka (poached eggs in Moroccan tomato sauce) and Moroccan lamb meatballs, often referred to as Kefta or Kofta.  This sauce is versatile and full of intense rich Moroccan spices.
