Grilled Potato Salad with Creamy Mustard Dill Dressing

A delicious country style grilled potato salad perfect for summer grilling.  We typically will use fingerling potatoes for this recipe but they weren't available at the market so we went with new potatoes which worked just as well.  The potatoes are parboiled then tossed in oil, salt and pepper.  Once grilled they get a slightly crisp outer layer but stay nice and soft inside.  We drizzle the warm grilled potatoes with a creamy rustic mustard dill dressing which is made using our Southern Style Rustic Mustard, sour cream, Dijon and fresh dill.  This potato salad is one of our favorite side dishes during grill season, especially when we have friends and family over. 


Grilled Potato Salad with Creamy Mustard Dill Dressing

Ingredients: 

1.5 lb baby or new potatoes or kipfler potatoes (fingerling potatoes)

2 Tbsp oil (light olive oil or vegetable oil)

Salt and Pepper

Mustard Dressing Ingredients: 

1/3 cup Sour Cream

2 Tbsp Wozz! Southern Style Rustic Mustard

1 Tbsp Dijon Mustard

3 Tbsp water

Combine all ingredients in a small bowl with a spoon or whisk and set aside.

Garnish Ingredients:

1/4 cup dill sprigs (garnish)

Method:

1. Cook Your Potatoes.  Bring a pot of salted water to the boil.  Boil potatoes for 10 minutes.  Once finished boiling, remove potatoes and plunge in cold water just until cool enough to handle.

2. Prep and Season Your Potatoes. Cut each potato in half length wise. Season the flat side with a little salt and pepper.  Give a minute or two before adding the oil and coating the potatoes evenly.

3. Grill Your Potatoes. Grill potatoes flat side down for 10 minutes, check at the 5 minute mark to avoid burning.

4.  Dress Your Potatoes and Serve.  Transfer hot grilled potatoes to a serving plate. Arrange your potatoes as desired and spoon over creamy mustard dressing, garnish with fresh sprigs of dill and fresh cracked pepper.  Serve.

Extra Tip*  Make extra creamy mustard dill dressing and keep in the fridge for dipping or adding to sandwiches and wraps.
