Soba Noodle Salad with Japanese Sesame Miso Dressing
A quick and easy vegan lunch option. Soba noodles simply cooked according to package directions, cooled under running water and tossed with sliced cucumber, green onions and our creamy Japanese Sesame Miso Dressing.
Soba Noodle Salad with Wozz! Japanese Sesame Miso Dressing
1 bundle of soba noodles (cook according to package directions and then strain under cold water) * In a typical package of soba noodles their are 3 bundles, I cooked 1 bundle which serves 1 generously for lunch or can be divided between 2 people for a light dish.
1/3 English Cucumber - deseeded and thinly sliced
2 Sprigs Green Onion - thinly sliced at an angle
Nori Sushi Roll Seaweed - I used Eden brand - just a little cut up finely as a garnish
Black Sesame Seeds for garnish
Wozz! Japanese Sesame Miso Dressing
Cook your soba noodles according to package directions, drain under cold running water to cool.
In a mixing bowl combine noodles, cucumber, green onion and toss with Wozz! Japanese Sesame Miso Dressing (as much as you prefer).
Garnish with black sesame seeds and finely sliced nori seaweed. Serve.
