Vietnamese Grilled Chicken with Mint Lime and Chili Marinade

Sometimes simple is best.  Chicken breasts are marinated in our Vietnamese Mint Lime and Chili Sauce and Dressing with a pinch salt and pepper.  The chicken breasts are grilled and served with snap peas, red onion, fresh cilantro or mint, chili flakes and lime wedges.  The clash of spicy chili, sweetened lime and fresh mint makes these char grilled breasts simply delicious.

Vietnamese Green Tea and Mint Grilled Chicken Recipe:

Mix together 1/3 bottle of Wozz! Vietnamese Mint Lime and Chili Sauce, pinch of salt and pepper.  Marinade chicken breasts for 4 hours or overnight.

Preheat oven 425 degrees F

Brush grill pan with oil.  Grill chicken breasts on medium high heat for 2 minutes on each side.  Drizzle a bit more Vietnamese Mint Lime and Chili Sauce on grilled breasts, transfer to oven and cook for an additional 5-10 minutes.  (until cooked through - depending on on how thick or thin your chicken breasts are will determine cooking time - ours were medium thick)

Remove from oven.  Arrange on serving platter or cutting board, rustic style with blanched peas, sliced red onion, cilantro or mint and lime wedges.  Drizzle with squeeze of lime, extra drizzle of Vietnamese Mint Lime and Chili Sauce (if desired), pinch of chili flakes, salt and pepper.
