Pear Ginger Dark and Stormy Cocktails

So the traditional Dark and Stormy Cocktail uses Gosling's Black Seal rum, lime juice and ginger beer however we switched it up a bit and used what we had on hand...we figured during times like these with COVID, why run to the store if you don't have to.  So we used some generic spiced rum we had on hand, traditional old school Canada Dry Ginger-Ale, our Pear Ginger Vinegar Shrub and a fresh lime wedge.   The results were delicious.  Our Pear Ginger Vinegar shrub adds a nice pear flavor with a pepper ginger bite which makes up for the ginger beer.  It's all about improvising during COVID right?  Make due with what you have...change it up a bit cause there is no reason to make unnecessary trips to the grocery store.  And with the clocks changing back this November, no leaves on the trees and a coyote in the yard the other night, this cocktail is well suited for the season.  

Pear Ginger Dark and Stormy Cocktails (makes 2 cocktails)

Ingredients:

Spiced Rum
Ginger-ale
Wozz! Pear Ginger Vinegar and Cocktail Mixer
Fresh Lime Wedges
Crushed Ice
Fresh Slice of Pear for garnish (optional)

Pear Ginger Dark and Stormy Cocktails Method

In a highball glass, add crushed ice.  Add to each glass, 2 ounces spiced rum and 1.5 ounces of Wozz! Pear Ginger Vinegar / Cocktail Mixer and stir.  Top each glass with ginger-ale.  Add a good squeeze of 1/2 fresh lime to each glass. Stir gently. Garnish with lime wedge and slice of fresh pear.  Enjoy. :)
