As the weather starts to warm up this is a nice light fresh salad that does not skimp on flavor. It's a great salad to accompany your outdoor grilling, you can swap out the rotisserie chicken with grilled chopped chicken if you prefer. Our Cambodian Coconut Peanut Sauce / Dressing is a delicious creamy peanut coconut dressing with a touch of lime, chili and spices that really makes this salad spectacular.
Ingredients:
1/2 Rotisserie Chicken Shredded
8 Springs Mint (leaves removed and stems discarded)
1 Small Red Onion finely sliced
1 Small Pickling Cucumber finely sliced
1 Red Thai Chili finely sliced
Wozz! Cambodian Coconut Peanut Sauce / Dressing
1/2 Fresh Lime Wedges For Garnish
Make Your Salad:
Arrange your salad ingredients, drizzle with Wozz! Cambodian Coconut Peanut Sauce/Dressing. Squeeze a fresh lime wedge over top and serve salad with remaining lime wedges. You can also garnish with crushed peanuts if desired.
