Shrimp Rice Paper Rolls with Wozz! Dipping Sauces
Shrimp rice paper rolls are the perfect light and healthy fare for summer eating! The best part about these rolls are that you can dip them in a variety of our sauces. I chose three Wozz! dipping sauces to highlight with these:
Vietnamese Mint Lime and Chili Dipping Sauce - A traditional style nuoc cham with the twist of green tea and mint. Savory tangy and bright with a hint of chili.
Sweet Chili Orange Sesame Sauce - A sweet chili sauce made with roasted red pepper, Fresno chili, ginger, garlic, fresh orange and toasty sesame. Medium heat.
Japanese Sesame Miso Dressing and Dipping Sauce - A savory nutty dipping sauce.
Each one was terrific and it was nice to switch between the three. You can also use a variety of our sauces with pot stickers, steamed dumplings and grilled chicken skewers. Our Thai Hot Pepper Jelly, Cambodian Coconut Peanut Sauce and Ginger Soy Infusion Sauce are also some of our favorite choices for these.
Shrimp Rice Paper Rolls with Wozz! Dipping Sauces
Recipe:
Shrimp Rice Paper Rolls (Makes 4 rolls)
4 Cooked Shrimp (cut in half lengthwise)
Vermicelli Noodles (boil per package instructions- I tend to boil for just 1 minute)
1 Carrot julienned into matchstick strips
Purple Cabbage leaf cut into wide strips
1/2 English Cucumber julienned into matchstick strips
Bean Sprouts
Fresh Cilantro
Fresh Mint
Rice Paper Rounds
Bowl of Water
Method
I make my rice paper rolls on the counter top lined with wet paper towels. The rice paper rounds become very sticky when they are not kept moistened.
Dip one rice paper round in bowl of warm water for a quick second, remove and then place on moist paper towel. Leave a one inch border from edge and add your ingredients starting with shrimp, then noodles, then carrot, cucumber, bean sprouts, cilantro, mint and then the wide cabbage leaf strip on top. Wrap by starting with the right side, fold right side in then pull front edge up and over, fold in other side and then roll. Place seam side down when finished and place on plate with plastic wrap on it to keep from sticking to plate. (If you are unsure about how to wrap these you can watch plenty of videos on you tube)
