The Best Marinades and Sauces for Braising and Stews
When we think of braising our thoughts jump to a large cut of meat slowly simmered over many hours like a brisket or pot roast. Nothing says home cooking like the smell of a home full of the rich aromas of a slow braised meal. Braising can be stove top, oven or crock pot, with large cuts or smaller portioned pieces, on the bone or boneless, with lots of liquid or only a little. It is a great method to make cheaper cuts deliciously tender and to impart depth of flavor into proteins like chicken. Regardless of whether you are braising for a day, or an hour, we've selected our favorite marinades, condiments and sauces to be used to enhance the braising of stews, pot roasts, curries and tajines or to serve as finishing sauces and condiments for all types of braised lamb, pork, beef or chicken dishes.
1. Chermoula Sauce and Marinade For Braised Lamb and Tagines
Our North African Chermoula can be used as a marinade, as a finishing sauce or added to the braising liquid of the dish. It's the perfect accompaniment for slow braised lamb shanks as it cuts the richness with a little bold citrus. Chermoula's bold lemon zing and kiss of Moroccan spice is as at home on lamb as it is on braised chicken, beef and seafood. If you don't have lamb shanks, try this slow cooked Moroccan lamb tagine with apricot and almonds.

2. Sichuan Chili Garlic Dan Dan Sauce For Beef Short Ribs
Beef short ribs marinated and braised in a spicy Sichuan Chili Garlic Dan Dan Sauce adds an aromatic spicy umami rich flavor profile to the beef. You can add the braised beef to a Sichuan seasoned beef broth and the result is a pho style soup that is incredibly bold, rich, spicy, light and easy!

3. Sticky Date and Candied Orange Chutney For Braised Chicken
This date and orange chutney can be added to your braising liquids for a wonderful accompaniment for bone-in chicken braising. Chicken Marbella is a favorite quick braise recipe of ours where chicken pieces are marinated and braised in a combination of vinegar, green olives and our Sticky Date Candied Orange Chutney and white wine. This recipe is ready in a little over an hour and it's a delicious, quick set it and forget meal that is great for a crowd.

4. Triple Ale Onion Jam For Braised Beef and Pork
Our Triple Ale Onion Jam can be used to make a delicious Beef Carbonnade and cuts out hours of cooking time. Beef Carbonnade is a Belgium beef onion beer stew made with slow braised chuck steak with plenty of onions and Belgian Ale cooked for 4 hours. We've already braised our onions for 4 hours and finished with three artisan ales, so you can get a full flavored onion sauce in a fraction of the time. You can also use our Triple Ale Onion Jam as a braising sauce for chicken or pork tenderloins with apples.

5. Ginger Soy Infusion Sauce For Beef
Use our Ginger Soy Sauce for braising pot roast favorites like bottom round or chuck, the resulting juices make for a bold beef broth to serve along with noodles and shitake. Beef caramelized and braised with our umami rich Ginger Soy Sauce gives depth of flavor, while still being light and brothy.

6. Moroccan Tomato Onion Sauce For Braised Veal Shanks
A Moroccan twist on the Italian Osso Buco classic - Veal shanks slowly braised in our Moroccan Tomato Sauce with chopped celery and carrots and finished with a parsley Chermoula sauce instead of the traditional gremolata. Some say you can't improve on a classic, but trying sure can be delicious.
7. Middle Eastern Shawarma Marinade For Braising Lamb and Chicken
Shawarma marinated and braised leg of lamb is so easy and oh so delicious. Layers of warm Middle Eastern spices and a little citrus from preserved lemons and fresh orange juice make up this delicious sauce. Marinate your lamb (you can also substitute chicken thighs) in the shawarma sauce with a combination of orange juice and water for the braising liquid and you've got something very special. Serve shawarma braised lamb or chicken with flatbreads, salad and yogurt sauces or over couscous, chickpeas or rice.

8. Southern Style Rustic Mustard For Braised Corned Beef and Chicken
Slowly braise corned beef in our Southern Style Rustic Mustard with onions and finish it off with a whisky mustard glazing sauce made by combining our Southern Style Rustic Mustard with a little brown sugar and Irish whiskey. Spoon the mustard glaze over the corned beef in the last few minutes of cooking time. Creamy mustard braised chicken is also a delicious and easy weeknight meal that can be served over mashed potatoes with green beans.

9. Balsamic Fig Mostarda For Brisket or Short Ribs
Brisket braised or short ribs in red wine and our Balsamic Fig Mostarda results in a rich jammy braising sauce that can be also be used to make a finishing sauce. Once the brisket has finished braising, the juices are reduced on the stove top with a splash of balsamic vinegar to cut and brighten the sauce. The finishing sauce is then poured all over the sliced brisket or ribs prior to serving.
10. Salsa Verde For Braised Pork Butt
Our Kiwi Lime Salsa Verde makes a wonderful bright vibrant and spicy Mexican sauce for braising whole cuts of pork. It's an easy sauce for "set it and forget it" crock pot and braising recipes. Once finished cooking in the salsa verde, the tender flavorful pork can be shredded and used in tacos, pulled pork sandwiches, enchiladas and lettuce wraps.

11. Moroccan Tomato and Onion Relish and Simmer Sauce For Slow Cooked Braised Meat Curries, Tagines and Cabbage Rolls

13. Thai Orange Ginger Relish For Crock Pot Pulled Pork
Our Thai Orange Ginger Relish and Simmer Sauce with it's citrus tang, chili and ginger makes a wonderful addition to crockpot pulled pork. We like to add our shredded orange ginger pulled pork to banh mi sandwiches (so delicious!). This relish can also can be used as a braising sauce for Thai Orange Ginger chicken thighs.
